Induction cooking has been around in Europe for years and is now becoming a popular trend in American kitchens. It works with coils made of magnetic materials, which are used to generate a lot of heat. When that heat is released is goes directly into the pan instead of spreading out over the cooktop like a regular gas or electric range.
