Materials:
table protector (plastic, etc.)
20 to 24 red bricks (Chicago, if possible)
7 clay pots in different sizes (1 large, 2 medium and 4 small)
floral foam (enough to fill each pot)
plastic to seal each pot
10 dozen roses in different colors and sizes
1 bunch lemon leaf
greens to cover the table

Steps:
- Make sure to get the roses one or two days in advance. Make a fresh cut in the bottom of the stems and place in lukewarm water. Ensure they get enough water and that they open up.
- To create this magnificent centerpiece, start by protecting the table with a cover. Then build up the center of the table with bricks. Make sure to have a place for the main centerpiece, the two smaller centerpieces and at the lowest level, two more centerpieces. Be sure to also leave room for candles. The bricks used are hollow and filled with floral foam in the center to hold more roses. Soak floral foam in water and make sure it is completely saturated.
- After the bricks are in place, begin the floral arrangements. Take each clay pot and cover completely by attaching sheet moss with hot glue. Seal the hole in the pot so water will not leak out (use plastic shopping bags if necessary). Completely fill each pot with wet floral foam.
- Start with the largest pot and work down to the smaller ones. Place one rose with a 12" stem in the center of the pot. Keep adding roses, cutting the stems shorter and shorter until filled. Add lemon leaf around the edge of the pots to hide stems . Place arrangements on the bricks.
- Add roses to the floral foam in the bricks. Now place the candles and greens to cover the table. If the party is during Christmas, cover the table with fresh tree cuttings and plenty of cut fern or similar greens. Plan spaces to place food trays and dishes as well as fruits and vegetables, and then cover the greens that these will be placed on with washed lettuce, kale, cabbage, etc.
