Fresh currants are a wonderful addition to fruit salads, or a refreshing drink like this berry fruit punch.
If you can't wait for your own bush to bloom, gather currants from a nearby pick-your-own farm. This recipe project takes 2 hours to complete.
2 cups (225 g) red currants, stalks removed
1/2 cup (100 g) raspberries
1 1/4 cups (240 g) sugar
14 fl ounces (400 ml) cold water
Heat 1 1/2 cups (240 g) sugar and 14 fl ounces (400 ml) of water slowly in a saucepan, stirring gently until the sugar has dissolved. Boil for 3 minutes, then cool.
Put the fruit into a bowl. Mash it together well, using the back of a fork or a potato masher. Place a damp dish towel under the bowl so it doesn't slip.
Into your mashed fruit, pour 4 fl ounces (100 ml) of the sugary syrup that was prepared earlier. Stir this mixture gently, but thoroughly.
Cut the end off a clean pair of panty hose (make sure they're an old pair). You can also cut a square of clean muslin and stretch this over the top of a tall pitcher. Secure with a rubber band.
Pour the fruit mixture through the cloth. The cloth will act like a fine strainer and allow only juice to pass through and collect in the bowl underneath. Leave this for an hour or two.
Mix the rest of the cooled syrup with the punch. Pour this into a clean bottle and store it in the refrigerator until you need it.
When you're ready, pour a little punch into a pitcher according to taste, and add water, sparkling water or soda water to make a refreshing treat.
