Spicy Pineapple Mango Skewers and Cumin Lime Yogurt Dip
ancho chili powder (to sprinkle on fruit)
1 teaspoon ground cumin
juice and zest of 1 lime
1/2 cup plain Greek yogurt
Watermelon and Peach Skewers and Ricotta Mint Balsamic Dip
1/2 small watermelon
2 tablespoons chopped fresh mint
1/2 cup ricotta cheese
balsamic vinegar drizzle
1. Mix ingredients to make each dipping sauce (Images 1 and 2). Cut fruit into slices at least 1 inch thick and stack, alternating ingredients on a bamboo or metal skewer (Image 3).
2. Spray with olive oil and place on grill uncovered on medium heat for 15 minutes, periodically rotating on each side (Image 4).
3. Serve on skewer with paired dipping sauce.
