The same seasonings and sauce can be used to dress both chicken and meatless patties for a one-skillet dinner. Mashed cauliflower replaces carb-loaded potatoes.
Serve everyone what they want at dinnertime--the meat eaters, the low-carbers, and the vegetarians--with a minimum of fuss and tips from chef Leanne Ely.

Mashed Faux-Tay-Toes
(a low-carb alternative to mashed potatoes)

Ingredients:

head of cauliflower
cream cheese

Preparation:

Steam a head of cauliflower. Add chunks of cream cheese and mash together until smooth. Season to taste with salt and pepper.

Garlic and Lime Chicken

Ingredients:

2 tsp. olive oil
2 tsp. butter
2 veggie chicken patties
2 chicken breasts
1 tsp. salt
1 tsp. pepper
1/4 tsp. cayenne pepper
1/4 tsp. paprika
1 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. thyme
1/2 cup vegetable broth
4 tsp. lime juice

Preparation:

Heat oil and butter in a skillet. In the meantime, mix all the seasonings and sprinkle the patties and chicken with it. Combine the broth and lime juice in a measuring cup.

Saute the patties in the hot butter mixture. After the patties have browned, remove them from the skillet and add half of the broth and lime-juice mixture. Whisk vigorously until reduced and thickened. Pour over the patties.

Wipe out the pan and start over with the butter and oil. Heat and add the chicken breasts. Brown on both sides and repeat the procedure for making the sauce with broth and lime juice. Pour over the browned chicken.
