Food journalist Shirleen Loloyan shares recipes and ideas for creating tasty meals in the dorm room that cost much less than takeout and taste great.

  • Most dorm rooms will have only a small microwave and refrigerator, so these recipes work well with those appliances.

  • Twelve essential items every college student should are the following: ketchup, mustard, mayonnaise, soy sauce, lunch meat, canned goods (fruits, veggies, tuna) cheese, pasta, marinara sauce, milk and butter and bread. Spices might include salt and pepper, oregano, paprika, rosemary, garlic and cinnamon.

Easy Thousand Island Dressing

Combine equal parts mayonnaise and ketchup. It's great on burgers and salads.

Teriyaki Sauce

Ingredients:

1/4 cup soy sauce
2 Tbs. ketchup
2 Tbs. each garlic powder and sugar

This is great as a marinade, added to sandwiches or as a dip.

Easy Salad

Combine prepackaged lettuce with canned veggies such as kidney beans, baby corn, olives, artichoke hearts or sauerkraut. Mix equal parts honey and mustard for a no-fat dressing (about one tablespoon of each).

Fish Dish

Ingredients:

canned mushrooms
1 tsp. soy sauce
fish fillets
seasonings of choices

Preparation:

Microwave canned mushrooms until hot. Pour soy sauce on a fish fillet (can be bought frozen and preseasoned, if desired) and microwave for three to five minutes. Serve with the mushrooms.

Fruit Cobbler

Ingredients:

1 can cherry pie filling
1 pkg. yellow cake mix
1 stick of melted butter
canned peaches
2 Tbs. sugar
2 Tbs. cinnamon

Preparation:

Combine pie filling, cake mix and butter in a bowl and microwave for 11 to 13 minutes. Arrange peaches on top and sprinkle with sugar and cinnamon.
