  • Some alternatives to bread crumbs include corn flakes, coconut, pretzels, potato chips, Japanese Panko crumbs, crackers and cornmeal (figure A).

  • While dredging, keep one hand dry or have a damp towel handy to wipe off your hands.

  • Egg, milk or buttermilk is perfect for dredging.

  • Here's a tasty recipe that involves dredging:


Pretzel Chicken

Ingredients:

3/4 cup Dijon mustard
2 Tbs. honey
1/4 tsp. cayenne pepper
1/2 tsp. garlic salt
4 skinless, boneless chicken breasts
1 cup crushed pretzels

Preparation:

In a small bowl, combine mustard, honey, cayenne pepper and garlic salt. Reserve half. Cut chicken into strips. Coat in mixture. Dredge in crushed pretzels (figure B) and place onto a baking pan. Bake at 350 degrees for about 20 to 25 minutes or until golden brown.
