Heart-Shaped Spinach Pie

Ingredients:

1 medium onion, roasted
2-1/2 lbs. cooked spinach
12 egg whites
3/4 cup low-fat tofu
2 Tbs. brewer's yeast
1 Tbs. granulated onion
1 Tbs. granulated garlic
12 oz. fat-free soy cheese
3 sheets phyllo dough

Preparation:

Roast the onion whole on a cookie sheet in a 350-degree oven for about an hour, then peel and chop. Cook and thoroughly drain spinach. Place roasted onion, spinach, egg whites, tofu, yeast, onion, garlic and cheese in a food processor. Puree until tofu is well-blended.

Pour mixture into a heart-shaped mold that rests on a cookie sheet. Crumble phyllo dough on top of the pie, then bake in a 350-degree oven for 45 minutes.

Ingredients:

preferred salad greens
beets
red peppers
tomatoes
red onions

Preparation:

Combine ingredients in a bowl and toss.

Raspberry Vinaigrette Dressing
(for Cupid Salad)

Ingredients:

1 Tbs. shallot, chopped
3/4 cup frozen raspberries
1/2 cup liquid fruit-juice sweetener (or apple juice concentrate)
1/4 cup raspberry vinegar (or any other type of choice)
1 Tbs. Dijon mustard
1/8 tsp. sea salt

Preparation:

Mix all ingredients well, or puree for a smoother texture. Toss with Cupid Salad.

Heart-Shaped Devil's "Fooled" Cake

* Note: The "fooled" part of the title comes from the delicious taste, despite the very healthy ingredients.

Ingredients:

3 cups cane sugar
2 cups all-purpose white flour
2 cups low-fat cocoa powder
2 tsp. baking soda
2 tsp. baking powder
4 egg whites
1-1/4 cups low-fat silken tofu
1-3/4 cups unsweetened applesauce
1 tsp. vanilla extract

Preparation:

Mix all cake ingredients thoroughly with an electric mixer. Pour into a lined, heart-shaped pan or mold, then bake in a 350-degree oven for 30 to 45 minutes (insert a skewer to test doneness). Serve with cocoa frosting and sliced strawberries.

Cocoa Frosting

Ingredients

2 Tbs. cocoa powder
1/4 cup hot water
3 egg whites
1-1/2 cups natural-cane sugar
1 tsp. cream of tartar
2 tsp. vanilla extract

Preparation:

In a metal bowl, dissolve the cocoa powder in hot water. After the powder is thoroughly dissolved, mix in the egg whites, sugar and cream of tartar.

Set the bowl over a pot of hot water to form a double boiler. Using an electric mixer beat on low speed for four minutes. Increase speed to high and beat an additional four minutes.

Remove mix from the heat, add the vanilla and beat another three minutes on high.

Chill the frosting in the refrigerator for about 20 minutes before using.
