Curry Salmon

Ingredients:

2 tsp. grapeseed oil
1 cup shallots
1 Tbs. minced ginger
2 tsp. minced garlic
2 tsp. curry powder
1 tsp. coriander
1 can coconut milk
1 bottle clam juice
1 Tbs. fish sauce
1 Tbs. natural sugar
1 Tbs. lime juice
1 tsp. chili paste
1 lb. salmon, cut into 1" chunks
1 bag triple-washed spinach
jasmine rice

Preparation:

Sauté shallots, ginger, garlic, curry powder, coriander in grape-seed oil. Bring coconut milk, juices, sugar and chili paste to a boil. Add salmon and allow to simmer for about six to eight minutes. Serve over jasmine rice.

Crusted Sea Bass

Ingredients:

1Tbs. cumin seeds
1/2 tsp. kosher salt
1/2 tsp. peppercorn
sea bass fillets
olive oil
lemon for garnish

Preparation:

Toast cumin seeds in a dry skillet, then grind with kosher salt and peppercorns. Rub onto the sea bass. Sauté in olive oil for four to six minutes per side, then place the entire skillet in the oven, preheated to 350 degrees, for four to five minutes. Garnish with lemon and serve.
