Flawless Mashed Potatoes

Ingredients:

2 lbs. russet or Yukon gold potatoes (Russet potatoes make fluffy mashed potatoes, whereas Yukon potatoes make a creamier mashed potato.)
1 Tbs. salt and more to taste
1 cup milk or cream
4 Tbs. unsalted butter
1/4 tsp. freshly ground black pepper
1/8 tsp. freshly grated nutmeg

Preparation:

Peel the potatoes and slice them into 1-1/2 inch pieces. Place in a saucepan and cover with cold water. Add one tablespoon salt and bring to a simmer.

Fill another saucepan with water and place over low heat. Potatoes should simmer on low until they are tender--about 20 minutes. Drain in a colander. Pour the milk or cream in another saucepan and heat over medium-high heat.

Place a bowl over the simmering water and press the drained potatoes through a ricer (see photo at right) into the bowl. Stir the potatoes with a wooden spoon until smooth. This should take approximately one minute. Mix in the butter with a whisk and then slowly add the hot milk, whisking continuously. Add the pepper, nutmeg and additional salt to taste. Serve hot.

Additional ingredients can be added to flavor the classic mashed potatoes such as 1/4 cup sour cream, horseradish or roasted cloves of garlic.
