Italian Beet Greens

Ingredients:

3 Tbs. olive oil or butter
1/3 cup thinly sliced onion
2 minced cloves of garlic
1/2 tsp. red pepper flakes
1 to 2 bunches chopped beet greens
1/2 tsp. salt
2 Tbs. lemon juice
1 sliced baguette
Parmesan cheese for topping

Preparation:

Heat the oil, then add onion and garlic. Once the onion is soft, add pepper flakes and beet greens. Once the greens are wilted, add the salt and lemon juice. Place on top of baguette and sprinkle with Parmesan cheese.

Sautéed Swiss Chard

Ingredients:

3 Tbs. olive oil
1 minced shallot
1 bunch Swiss chard
1/4 tsp. red pepper flakes
1/4 cup soy sauce
2 Tbs. balsamic vinegar
salt and pepper
1/4 cup sesame seeds

Preparation:

Start by heating the oil and then sautéing the shallot. Next add pepper flakes, soy sauce and vinegar. Simmer until the liquid evaporates, then add the chard. Season with salt, pepper and sesame seeds.

Bonus Tip

Add flavor to any salad by adding arugula.
