Ingredients:

Preparation:

Prep veggies by blanching them first. Bring some water to a boil, then add raw veggies for one to two minutes. Drain and shock under ice water. Now they can be frozen and are ready to be reheated and served.

Try one of the following two sauces to accompany your veggies:

Buttermilk Sauce

Ingredients:

1/2 cup buttermilk
2 oz. goat cheese
1 Tbs. olive oil
1 garlic clove
1/2 tsp. pepper

Preparation:

Blend together ingredients and pour over veggies.

Caesar Sauce

Ingredients:

2 Tbs. olive oil
1 Tbs. apple juice
1 Tbs. vinegar
1 Tbs. Dijon mustard
salt to taste
1 small can anchovies

Preparation:

Blend together ingredients and pour over veggies.
