Sanbaizu

Ingredients:

1/2 cup rice vinegar
1-1/2 Tbs. sugar
2 Tbs. soy sauce
2/3 cup water

Preparation:

Mix all ingredients and pour over thinly-sliced Japanese cucumber. This makes a wonderful appetizer--especially before sushi!

Fried burdock sauce over burdock root slivers
Fried Burdock Sauce

Ingredients:

slivers of burdock root
1/4 cup sugar
1/4 cup soy sauce
1/4 cup water

Preparation:

Shave slivers of burdock root and soak in cold water so they won't brown. Dry the slivers, add oil to a saute pan and saute the slivers with all ingredients for around 45 seconds.
