Combine red and green cabbage to make this colorful dish.

TIPical Mary Ellen host Mary Ellen Pinkham demonstrates how to make delicious homemade cole slaw.
  • The types of cole slaw that are most often made are creamy and sweet-and-sour.

  • Buy cabbage that feels heavy. The leaves should be tightly packed and have a shine to them. Avoid cabbage that is yellow or has dark patches.

  • The best way to shred large batches of cabbage is to use a food processor. For smaller batches, shred by hand.

  • It is fun to mix red and green cabbage. So combine the two types with four tablespoons of cider vinegar, diced onions, sugar, red peppers, carrots, beets, green peppers and apples. Add a little mayonnaise at the end. This can be stored in your refrigerator for a week.

  • Always serve cole slaw well chilled.

  • Give store-bought cole slaw some character by adding chopped apple, green and red pepper, a little balsamic vinegar or toasted almonds.
