Split-Pea Soup

TIPical Mary Ellen explains how to prepare split-pea soup.

Ingredients:

2 cups split peas
2 carrots
2 celery stalks
2 peeled onions
8 cups boiling water
ham or sausage chunks to season

Preparation:

It is not necessary to soak the peas--simply add them to the boiling water. Add carrots, celery stalks, and onions to the water. Let simmer for 1-1/2 hours. Remove the whole vegetables.

Use an immersion blender to cream the soup. Cut up the veggies into bite-size pieces and toss them back into the soup. Add chunks of ham or sausage. Serve with croutons and/or a dollop of sour cream.
