TIPical Mary Ellen host Mary Ellen Pinkham shares a few of her favorite spring salad recipes.

Spinach-and-Strawberry Salad
Spinach-and-Strawberry Salad

Ingredients:

1/2 cup sliced strawberries
1 lb. fresh spinach
1 cup fresh bean sprouts
1/2 cup halved grapes
1/4 cup cooked bacon, crumbled

Preparation:

Combine all ingredients in a large bowl.

Dressing Ingredients:

1 cup canola oil
1/4 cup cider vinegar
1/2 cup minced onion
1/2 cup sugar
1/2 tsp. salt
1 tsp. Worcestershire sauce

Preparation:

Pour the dressing over the salad, toss and serve.

Light Tortellini Salad
Light Tortellini Salad

Ingredients:

7 oz. tortellini
6 oz. fresh spinach
1/2 cup shredded red cabbage
1/4 cup cooked crumbled bacon
1/4 cup chopped green onions

Preparation:

Cook the tortellini, drain and cool under cold water. Place the tortellini in a large bowl and add the spinach, red cabbage, bacon, green onions.

Dressing Ingredients:

1/4 cup red-wine vinegar
1/2 cup olive oil
1 Tbs. Italian seasoning

Preparation:

Right before serving the tortellini salad, pour on the dressing.

Tomato-and-Cucumber Salad

Ingredients:

1/2 cup tomato, chopped and seeded
2 cups cucumber, peeled and seeded
1 cup feta cheese
1/2 cup olive oil
1/4 cup sunflower seeds
2 Tbs. lemon juice
2 Tbs. minced garlic
fresh dill

Preparation:

Combine all ingredients in a large bowl, toss and serve.
