Watercress Salad

Ingredients:

1 bunch of watercress
1/2 medium-size red onion
2 oranges

Preparation:

Toss sliced red onion and oranges with the watercress. Reserve the juice that is extracted from oranges during slicing to use in dressing.

Dressing

Ingredients:

juice from sliced oranges
4 Tbs. extra-virgin olive oil
2 Tbs. red-wine vinegar
salt and pepper to taste

Preparation:

Mix all ingredients and toss with salad.

* Serving Idea: Saute some chicory in olive oil, add salt and pepper to taste. Cook until it has a wilted look, then serve.
