Pumpkin Mashed Potatoes

The texture and taste of these potatoes will have everyone asking for seconds.
Healthy chef Nancy Fox shows how to prepare this healthy pumpkin dish. Pumpkin should be an important part of a healthy diet because it is packed with vitamin A, potassium and a lot of fiber--1/2 cup of pumpkin equals the amount of fiber in two slices of bread.

Ingredients:

2 medium potatoes, peeled and chopped
15-oz. can pumpkin
2 Tbs. margarine or butter
1/4 cup plus 1 Tbs. brown sugar, packed
1-1/2 tsp. salt
1-1/2 tsp. cinnamon
1 tsp. pumpkin-pie spice

Preparation:

In a medium saucepan, cover potatoes with water and boil until tender--approximately 20 minutes--then drain. In a food processor, combine potatoes and remaining ingredients. Beat until smooth.
