Chef Nancy Fox offers a recipe that is designed to make this nutritious vegetable more appetizing.

Ingredients:

10 oz. frozen broccoli, thawed
2 Tbs. fat-free sour cream
1/8 tsp. garlic powder
1/4 tsp. salt
1 tsp. lemon juice
4 oz. chopped green chilies
dash of hot sauce
1/2 small onion, chopped
1 small tomato, chopped

Preparation:

Mash the broccoli in a food processor. Add sour cream, garlic powder, salt, lemon juice, chilies and hot sauce. Stir in onion and tomato and mix well.

This dish is best if served immediately. If that's not possible, place it in the refrigerator for up to two days with plastic wrap touching the surface. This prevents it from turning dark.
