Cheesy Broccoli

Chef Nancy Fox offers a recipe that is designed to make this nutritious vegetable more appetizing.

Ingredients:

3 cups broccoli, washed and stems trimmed
1/3 cup low-fat cottage cheese or ricotta
1/8 cup grated fresh Parmesan
1/8 tsp. freshly ground pepper

Preparation:

Pour about two inches of water into a medium bowl. Add broccoli, cover with plastic wrap and place in the microwave to steam for six to seven minutes--until tender but crisp.

Meanwhile, combine cheeses and pepper over low heat in a large saucepan. Stir in broccoli and mix well. This dish is best if served immediately.

Yield: 4 servings
