For a tasty salad dressing, purée carrots and ginger (see photo) in a blender. Strain the mixture and reduce the liquid in a skillet to four-fifths of the volume. Take this syrup and blend with extra-virgin olive oil until you have the texture and consistency you desire. Pour over salad and serve.
