Move that bottle of white vinegar over and add some balsamics. The balsamic vinegar on the far left has been aged 20 years!
Chef Claudia McQuillan shares two delicious recipes that includes balsamic vinegar.

Classic Vinaigrette

Ingredients:

1 Tbs. grainy Dijon mustard
1 clove garlic, minced
1 Tbs. lemon or lime juice
1/4 cup red-wine vinegar
2 Tbs. balsamic vinegar
3/4 cup olive oil
salt and pepper to taste

Preparation:

Whisk all ingredients together thoroughly. Serve over salad.

Citrus Balsamic Vinaigrette

Ingredients:

2 Tbs. balsamic vinegar
1/4 cup fresh orange juice
2 Tbs. sugar
1/2 tsp. orange zest
pinch of ground nutmeg

Preparation:

Whisk ingredients in a pan over medium-high heat just until the sugar has melted. Serve warm with spinach salad and sliced pear. Break up some blue cheese into the salad if desired.
