Chef Beth Ginsberg provides a low-calorie topping for lemon meringue pie.

Ingredients:

1 cup natural cane sugar
1/4 tsp. cream of tartar
2 egg whites
1/4 cup water
1 Tbs. vanilla extract

Preparation:

Combine ingredients in the top of a double boiler. Stir for about four minutes or until the sugar dissolves. Pour into an electric mixer and beat on high for about seven minutes. Use it as a topping on any pie or ice cream.
