Healthy Salad Dressings

These three dressings are both delicious and fat-free!
Healthy chef Beth Ginsberg makes popular salad dressings without sacrificing good nutrition by cutting calories, fat and chemicals.

French Dressing

Ingredients:

1 Tbs. chopped shallot
1-1/4 cups low-sodium ketchup
4 oz. low-fat silken tofu
1 cup water
2 Tbs. yellow mustard
freshly ground pepper to taste

Preparation:

Puree the shallots in a food processor. Add the ketchup, tofu, water, mustard and pepper, then process for one minute.

Thousand Island Dressing

Ingredients:

1 shallot peeled (1 Tbs. chopped)
1 dill pickle or 1 Tbs. fat-free pickle relish
1 cup ketchup
3/4 cup low-fat silken tofu
3/4 cup water
1 Tbs. granulated onion

Preparation:

Place shallot and pickle in food processor fitted with a metal blade and process, then scrape down the sides of the work bowl. Next, add the remaining ingredients and process until pureed. Transfer the dressing to a covered container and refrigerate. A glass container is recommended for keeping the dressing fresh for the longest amount of time.

* Note: There are three types of tofu--firm, soft, and silken. For this recipe, Ginsberg recommends silken tofu.

Raspberry Vinaigrette

Ingredients:

1 shallot peeled (1 Tbs. chopped)
3/4 cup frozen raspberries
1/2 cup liquid fruit sweetener, apple juice concentrate, or honey
1/4 cup raspberry vinegar
1 Tbs. Dijon mustard
1/8 Tbs. sea salt

Preparation:

Place shallot in a food processor fitted with a metal blade and process, then scrape down the sides of the work bowl. Next, add the remaining ingredients and process until pureed.
