Roasting a turkey over vegetables provides a tasty fat-free gravy (See recipe below).
Chef Jim Shiebler shows how to make a low-fat gravy and sauce that are both guaranteed to taste just as good, if not better, than the traditional fattening ones.

No-Fat Turkey Gravy

Ingredients:

celery
carrots
red onion
white onion
red potatoes
garlic
button mushrooms
2 cups low-sodium chicken broth (for a 15-lb. turkey)
potatoes
fresh-cracked black pepper to taste

Preparation:

Cover the bottom of a large baking pan with vegetables. Pour chicken broth over the vegetables. Rest the turkey on the vegetables and bake normally, basting the turkey with the fluid.

When the turkey is ready, strain the fluid into a skillet and simmer for three to five minutes. In a separate pot, add several chopped potatoes to boiling water and boil until soft.

Mash the potatoes and add a mixture of two-thirds turkey broth and one-third mashed potatoes to a blender. Blend well. The result is a rich, delicious gravy without butter or fat. Season with fresh-cracked black pepper.

Two-Coat Sauce

Ingredients:

yellow peppers
fresh ears of white corn
1/2 cup water
dill
fresh-cracked black pepper

Preparation:

Purée one yellow pepper, kernels of one ear of white corn and water for seven to 10 seconds in a food processor (stick to this ratio if you need more sauce). Strain the mixture into a saucepan. Bring to a boil, then reduce heat to a simmer. Simmer for around three to five minutes or until the texture is smooth. Season with dill and pepper. Serve over steak or poultry.
