Reuben

TIPical Mary Ellen host Mary Ellen Pinkham explains how to prepare the perfect Reuben sandwich.

Ingredients:

corned beef
sauerkraut
pumpernickel rye
butter
Swiss cheese, sliced
Russian dressing (See recipe below.)

Preparation:

Heat two medium-size pans on the stove. Coat each with cooking spray to prevent sticking. Heat the corned beef and sauerkraut in one pan to bring out the flavor of the meat. Rinse the sauerkraut thoroughly before placing in the pan.

Take two slices of pumpernickel and butter one side of each. Place the bread butter-side down in the other pan and top each with a slice of Swiss cheese. Heat until the bread is lightly browned.

Spread some Russian dressing on top of the Swiss cheese. Remove the bread to a plate and top with the corned beef and sauerkraut mixture. Bring the two halves together, or serve open-faced.

Russian Dressing

Ingredients:

1/2 cup mayonnaise
1/2 cup sour cream
2 tsp. lemon juice
2 Tbs. ketchup
2 Tbs. finely minced onion

Preparation:

Combine all ingredients in a bowl and mix well. Spread on sandwiches or use as a dip.
