- Tuna is available in three forms--fresh (figure A), canned and in vacuum-packed pouches (figure B). The tuna from the pouch does not require rinsing.
- For the best tuna sandwiches, choose the white albacore type of tuna. Place this in a bowl, along with mayonnaise, a little chopped onion, some chopped celery and about a teaspoon of relish. Serve on soft bread with lettuce.
- To make a tuna melt, place a scoop of tuna salad on a piece of bread, top with cheese and place under the broiler. Serve open-faced (figure C).
- For a different take on the tuna melt, add chunks of cheese into the tuna salad, spread thickly on a piece of bread and place under the broiler. Watch as the cheese melts and turns into a creamy, delicious sandwich.
- Marinate fresh tuna steaks in oyster sauce. Just pour a bottle of oyster sauce into a large zipper bag, and place four to six tuna steaks in the bag. Seal the bag and let the tuna marinate in the refrigerator for a couple of hours.
- Fresh tuna steaks are best if cooked medium rare. Avoid overcooking tuna because that makes it tough.
