Pita Bread Sandwich

Ingredients:

red, yellow and green peppers, sliced diagonally
eggplant, sliced diagonally
zucchini, sliced diagonally
Portobello mushrooms
onion, sliced diagonally
carrots
vegetables of choice
fresh mozzarella, sliced
pita bread

Preparation:

Sear or grill vegetables until golden brown. Remove vegetables from grill and toss them into the marinade (see recipe below). Place the vegetables and fresh mozzarella inside the pita bread and grill the whole sandwich until the cheese begins to melt.

Ingredients for the Balsamic Vinaigrette:

1/2 cup olive oil
3 Tbs. balsamic vinegar
1 Tbs. Dijon mustard
salt and pepper
1 tsp. thyme
1 tsp. sumac
1 clove garlic, crushed

Preparation:

Whisk together all ingredients and set aside.
