Blue Moon Waldorf Salad

Ingredients:

2 apples, cubed
2 pears, cubed
1 stalk celery, chopped
1/4 cup raisins
2 to 3 Tbs. lemon juice
3/4 cup walnuts

Preparation:

Combine ingredients in a bowl.

Dressing Ingredients:

1 cup plain yogurt
3 to 4 Tbs. mayonnaise
1/3 cup blue cheese
1 Tbs. honey

Preparation:

Mix and pour over fruit.

California Waldorf

Ingredients:

3 apples, cubed
2 oranges, segmented
1 stalk celery, chopped
1/4 cup raisins
1 cup mango or papaya, cubed
1 cup cashews

Preparation:

Combine ingredients in a bowl.

Dressing Ingredients:

1 cup plain yogurt
1/2 tsp. lemon zest
2 to 3 Tbs. lemon juice
1 avocado
1 to 2 Tbs. honey

Preparation:

Combine ingredients in blender. Process until smooth. Pour over salad and mix well.

Waldorf Deluxe

Ingredients:

3 apples, cubed
2 to 3 Tbs. lemon juice
1 stalk celery, chopped
1 to 2 cups grapes
1 cup cubed cheddar cheese
1/4cup dates, chopped
3/4 cup pecans

Preparation:

Combine ingredients in a bowl.

Dressing Ingredients:

1 cup plain yogurt
1/4 cup mayonnaise
1/2 cup orange juice
1 tsp. grated orange rind

Preparation:

Blend in a bowl and pour over salad.
