Poached-Egg Casserole

* Note: This recipe is designed to be partially prepared the evening before a brunch.

Ingredients:

water
1 Tbs. white vinegar
pinch of salt
one egg for each guest
3 potatoes, peeled and grated
4 eggs, beaten
1 cup cream
1 bunch green onions, chopped
1/4 cup fresh tarragon, chopped
salt and pepper to taste
1/2 cup bacon, chopped
grated cheese in flavor of choice

Preparation:

Add vinegar and salt to boiling water. Crack one egg for each guest in a separate measuring cup and gently pour into the boiling water. Cook for two minutes, then place the egg in ice water. Store on a plate in the refrigerator.

Combine the remaining ingredients in a large mixing bowl. Pour into a baking dish, cover with foil and bake in a 350-degree oven for one hour. Allow to cool, then store in the refrigerator. Just before serving, grate cheese over the casserole, top with the partially-poached eggs and reheat in a 350-degree oven for 10 minutes. It's ready to serve.
