Eat these delicious muffins hot, or store them in the refrigerator for a few days.
Chef Krystine Crowell proves that breakfast doesn't need to lack variety to save time. She offers this alternative to cold cereal.

Ingredients:

3 cups egg whites or liquid egg substitute
2/3 cup nonfat milk
1/2 cup cheddar cheese
1 cup turkey ham, chopped

Preparation:

Combine all ingredients in a medium bowl. Pour mixture into muffin pans that have been sprayed with oil. Place in oven and bake for 20 minutes at 375 degrees.

* Note: The muffins can be stored in the refrigerator for up to five days.
