Leftover rice works great when making fried rice. This will provide a light and fluffy fried-rice dish that is less sticky than it would be if made using freshly prepared rice.

TIPical Mary Ellen host Mary Ellen Pinkham shares tips for making a fast delicious meal with leftover rice and vegetables.

Ingredients:

4 Tbs. peanut oil
1/2 cup chopped scallions
1 cup bean sprouts
1/2 cup chopped carrots
2 eggs, beaten
3 cups cooked rice
1 cup frozen peas
1 Tbs. soy sauce

Preparation:
Heat peanut oil in a wok over medium-high heat until the oil is hot but not smoking. Add scallions and fry for about 15 seconds. Stir in bean sprouts and carrots, adding a bit more oil if things look a little too dry.

Crack eggs in a bowl, beat well then add to the mixture. Stir-fry until eggs become firm. Add rice and toss, then mix in peas and toss well. Add some meat at this point if you like, such as pork, chicken or even leftover ham. Stir in soy sauce, mix well, and serve.
