TIPical Mary Ellen host Mary Ellen Pinkham shares tips for cooking with couscous.

Couscous Salad

Ingredients:

1 box of plain couscous
1 cup of chicken broth
1/2 cup crumbled feta cheese
1/2 chopped red onion
1 tomato, chopped
1/4 cup parsley
1/4 cup of chopped black olives
1/2 cup balsamic vinaigrette
salt and pepper to taste

Preparation:

Prepare couscous according to directions. Fluff with fork, then place into a large bowl.

Once cool, add remaining ingredients and mix well. Refrigerate for about an hour before serving to allow the flavors time to meld. Add some chickpeas if you're so inclined.

Tips

  • Couscous is a type of pasta that is made from semolina wheat.

  • Couscous is usually served as a side dish and can be served hot or cold.

  • Try using any leftover couscous in place of rice in burritos.

  • Another tasty way to prepare leftover couscous is to shape it into patties and throw it on the grill.
