Chef Jason Gibbons shares tips for cooking Italian dishes at home.
- Pour a few tablespoons of extra virgin olive oil in a pan, then toss in some fresh minced garlic and heat for about 30 seconds.
Add a handful of pre-cooked cubed potatoes. Crumble the potatoes before adding. Next toss in some fresh green beans that have been blanched (figure A). Season with salt and pepper and cook about a minute, just long enough to heat.
Next toss in a serving of pre-cooked pasta and mix well. Stir in some fresh pesto, along with a teaspoon or so of the water you cooked the pasta in, and mix well. Serve in a large bowl garnished with pine nuts, Reggiano Parmigiano cheese and a some diced tomatoes for color (figure B).Make homemade pesto by combining garlic, pine nuts, olive oil and basil fresh basil in a blender. Pulse a few times and add reggiano cheese then season with salt and pepper. Cover pesto with plastic wrap and store in the refrigerator.Always cook pasta in rapidly boiling salted water. Use a gallon of water for each pound of pasta to prevent the pasta from sticking together.
