Chopped tomatoes and fresh basil add beautiful color and great taste to this spaghetti pasta salad. It's is also a great way to use leftover spaghetti.

Spaghetti Pasta Salad

Ingredients:

1/2 lb. spaghetti noodles, cooked and rinsed
1/4 cup olive oil
3 tomatoes, chopped
3 cloves minced garlic
1/2 cup chopped fresh basil
salt and pepper to taste

Preparation:

Cook spaghetti ahead of time and chill in the refrigerator. Place cooked spaghetti in a large bowl, add all ingredients and mix well.

BLT Pasta Salad

Ingredients:

1/2 lb. elbow macaroni, cooked and rinsed
1 cup mayonnaise
1 cup chopped scallions
1/2 cup ketchup
1/2 cup lemon juice
2 Tbs. instant chicken bouillon
1/2 tsp. salt
2 large tomatoes, seeded and chopped
1/2 cup cooked crumbled bacon

Preparation:

Combine all ingredients in a large bowl and mix well. If desired, toss in some finely sliced lettuce.
