Professional chef Jamie Gwen debunks the myth that in order for you to have a quick meal, you must have fast food or heat up a frozen pizza. Her favorite quick ideas include the following:

Polenta

Follow directions on a box of quick-cooking polenta to prepare. Flavor with butter, Parmesan cheese, salt and pepper. Serve with sauteed shrimp and tomato sauce for make a well-rounded meal.

Pour leftover polenta into a glass casserole dish and allow to harden in the refrigerator overnight. Grill or saute slices until slightly brown on both sides and serve as an accompaniment to another meal.

Scaloppini

Ingredients:

prepared thin chicken breasts (browned and spiced)
egg, beaten
seasoned bread crumbs

Preparation:

Dredge chicken cutlets in beaten egg liquid and seasoned bread crumbs. Saute for two minutes on each side, then serve.
