Chicken and Pasta Stack

Deborah Fabricant offers this recipe made from leftovers that's not only beautiful, but tasty as well.

Ingredients:

nonstick cooking spray
pasta, cooked
spaghetti sauce
leftover chicken, cooked
ricotta cheese
Parmesan cheese
pine nuts
pesto

Preparation:

Spray stacking tool* with nonstick cooking spray. Stack cooked pasta, sauce, chicken, ricotta cheese, Parmesan cheese, pine nuts and pesto. Repeat. Use pasta as top layer.

Cover the top with aluminum foil to keep the pasta from hardening and browning as is bakes. Bake for 10 minutes in a 350-degree oven. Remove the stack and serve.

* Use an aluminum can that has been washed out and has had both ends removed, as a stacking tool. It will hold the layers together as the stack is built.
