Preparing Fondue

A classic cheese fondue starts with diced Swiss cheese and a touch of flour. Crusty breads, fresh vegetables and fruit slices are all tasty items to dip into fondue.

  • Fondue can be made with either cheese or meats. It can also be baked or turned into a dessert.

  • Cheese fondue is melted cheese with wine and spices served with cut pieces of bread.

  • Meat fondues are called Fondue Bourguignonne. The meat is cut into bite-size pieces and placed in a fondue pot half-filled with oil. Once the meat has finished cooking, the pieces are then dipped in various sauces and eaten.

  • Make sure the table where the fondue pot and burner will be set has a heatproof mat or surface.

  • Cheese and chocolate fondues should be kept over lower heat because they burn easily.

  • The best breads to eat with cheese fondue include French, Italian or sourdough. Cut them into squares to make them easier to dip.

  • Raw vegetables such as celery and carrots are also great for dipping in fondue, and apples are great for dipping in cheddar fondue. Other things that are great for dipping in fondue are breadsticks, crackers, corn or flour tortillas, pita bread or even new potatoes.

  • There are many recipes for cheese fondue, and it should be easy to find one to suit any taste. For a basic fondue, toss 1/2 pound of diced Swiss cheese with 1/2 tablespoon of flour. Next rub the fondue pot and a wooden spoon with a clove of garlic cut in half. Pour 1/2 cup of Chablis wine and heat over a low temperature. Add cheese and flour mixture and stir until melted. Stir in a dash of pepper and nutmeg and serve.

  • Dessert fondues are great when dipped with ladyfingers, angel food cake, plain cookies or pieces of fruit.
