The following recipe is a great way to use leftover pasta:

Ingredients:

1/2 lb. pasta
2-1/2 Tbs. olive oil
3 garlic cloves, sliced thick
1/4 tsp. red-pepper flakes
3/4 cup tomato sauce
3/4 cup chicken stock
2 Tbs. Italian parsley, chopped
1/2 Tbs. Romano cheese

Preparation:

First, sauté oil, garlic and pepper flakes in a nonstick pan over medium-high heat for three to four minutes or until garlic browns. Add parsley and cook another minute.

Add tomato sauce and chicken stock, bring to a boil and then simmer for seven to eight minutes. Add the cooked pasta and allow the mixture to blend for three to four minutes). Turn off the heat, sprinkle with cheese and serve.

Yield: 2 servings
