Dr. Myles Bader, aka the "Wizard of Food," presents some fabulous tips for making things easier in the kitchen.
  • To de-salt a ham, cook it in the oven for about half the full cooking time, remove from oven and discard all gathered juices. Pour ginger ale over the ham, return it to the oven and continue cooking.

  • A more effective way to de-salt a ham is to cover its skin with salt. This draws the saltwater out of the ham as it cooks.

  • To remove fat from soup, stir with ice cubes wrapped in cheesecloth or lettuce. Both ice and lettuce attract fat. Soak the fat off the top of hot soup with a slice of white bread, then serve.

  • To de-gas beans, put fennel seeds in the water when soaking them overnight. Use one teaspoon of fennel per one pound of beans.

  • Store cheese in a plastic container with sugar cubes and a paper towel that has been sprinkled with white vinegar. Mold will be attracted to the sugar cubes, and the vinegar will diminish the amount of overall mold.

  • Control rodents by soaking cotton balls in oil of peppermint, then placing them in trouble spots. The smell repels them. Replenish with fresh peppermint cotton balls every two to three months.
