Healthy chef Nancy Fox shares tips for making great cookies.
  • Bake one sheet of cookies at a time and place only in the center of the rack.

  • Only use cool cookie sheets for baking. A hot one will soften the dough, making it spread and changing its characteristics.

  • Remove cookies from a hot cookie sheet as soon as possible after baking. Transfer to a cooling rack or parchment paper.

  • Store cookies in an airtight container.

  • Cookies can be stored in the freezer for up to three months.

  • Raw dough can be made into preformed dough balls and stored in a freezer bag or plastic container for up to two months.
