Chef Jamie Gwen provides a recipe for making a simple, delicious meal in a slow cooker.
Ingredients:
1/2 cup soy sauce
1/2 cup orange marmalade
4 Tbs. ketchup
2 to 3 cloves garlic, chopped
1 tsp. ground ginger
1 Tbs. sesame oil
juice of 1 orange
3 lbs. baby-back or country-style pork ribs
Preparation:
Combine all ingredients (except the ribs) in a glass bowl. Dip ribs into the marinade and place in a slow cooker. If you prefer, place large slices of orange peel from the orange on the bottom first for an added orange zing. Once the meat is in and fits properly, pour in the remaining marinade, covering the meat well.
Cook on low for eight to 10 hours, then serve.
Some things to keep in mind:
- Use a slow cooker to cook foods overnight. By doing so, you don't have to leave the cooker unattended during the day, and all that's necessary for dinner is re-warming the dish from the refrigerator.
- When considering the purchase of a slow-cooker, go with the larger size. Even when half-full, foods won't scorch on the bottom. The larger size is more versatile, and is great for two people or for keeping foods hot all day at a get-together.
