Polenta and Chili Stack

Deb Fabricant, author of Stacks: The Art of Vertical Food, provides instructions for making this recipe have look and taste of top gourmet restaurants.

Ingredients:

polenta, cooked
nonstick cooking spray
2 Tbs. chili
cheese (any type), shredded
green onions

Preparation:

Bake a pan of polenta and cut pieces to fit the stacking tool*. Spray stacking tool with nonstick cooking spray. Begin the stack with a piece of polenta.

Layer chili, cheese, onions and polenta until three layers are created, ending with a piece of polenta. Bake for 10 minutes in a 350-degree oven.

* Use an aluminum can that has been washed out and has had both ends removed, as a stacking tool. It will hold the layers together as the stack is built.
