Fran's Leftover Potatoes

Ingredients:

1 leftover cold, large baked potato, grated (cold potatoes grate better)
1 small onion, grated
1 cup grated cheddar cheese
1 cup sour cream
1 can cream of mushroom soup
1 tsp. minced garlic
salt and pepper to taste
paprika to taste

Preparation:

Toss grated potato, onion and cheese together. Add sour cream, soup, garlic, salt and pepper, then mix. Put mixture into a greased 8-by-8 square pan. Sprinkle with paprika. Bake at 250 degrees for 30 to 40 minutes.

Yield: 4 to 6 servings
