Fontina & Grilled Veggies

Fontina Cheese and Grilled Vegetable Wrap

Ingredients:

1/2 cup mayonnaise
1/4 cup basil leaves chopped
juice of 1 lime
1 medium zucchini
1 red, yellow or orange bell pepper, quartered
2 red onion slices, about 1/4-inch thick
olive oil
salt and pepper
2 cups Romaine lettuce, shredded
1/2 pound fontina cheese, grated
2 large flour tortillas

Preparation:

Prepare spread in a small bowl. Combine mayonnaise, basil and lime juice. Stir to blend.

Brush vegetables with olive oil. Season with salt and pepper. Arrange vegetables on a medium-hot barbeque. Cook two to three minutes, or until grill marks appear. Flip over and grill an additional two minutes.

Lay out flour tortillas, and spread on the mayonnaise mixture. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap up the tortilla like a burrito.

Yield: 2 servings
