Spicy Basil Tofu Stir-Fry
If you're interested in incorporating tofu into your diet, but you're having trouble preparing it, the solution may be easier than you think. Professional chef Jet Tila explains how to whip up a couple of creative tofu treats.

Spicy Basil Tofu Stir-Fry

Ingredients:

4 to 6 Tbs. vegetable oil
4 to 6 garlic cloves, minced
3 to 4 serrano chili peppers, sliced
3 cups pressed tofu (bean cake), cubed
2 Tbs. sweet soy sauce
2 Tbs. dark soy sauce
4 to 6 Tbs. fish sauce
2 Tbs. chili paste in soybean oil
1-1/2 cups chopped onion
1-1/2 cups Thai basil leaves
3/4 cup chopped red bell pepper
1/2 tsp. white pepper

Preparation:

Add oil, garlic, and peppers to a hot wok or skillet. Stir to mix flavors. Stir in tofu, followed by the sauces and chili paste. Add onion, basil and pepper, stirring until basil wilts. Serve over rice.

Thai Sticks

Ingredients:

1 Tbs. sesame oil
1 Tbs. rice flour or all-purpose flour
2 egg whites
salt and pepper to taste
savory baked tofu
twelve 8" bamboo skewers
1 pkg. fresh egg noodles

Preparation:

Combine oil, flour, egg whites, salt and pepper in a bowl. Slice tofu into 12 equal portions and marinate in oil mixture for 45 minutes to an hour.

Skewer the tofu slices and wrap each slice in egg noodles. Fry one at a time in hot oil until noodles are golden (figure A), rotating the skewers to keep the noodles from unwrapping. Serve with a dipping sauce of sweet soy sauce and chili sauce or fish sauce, mixed to taste (figure B).
