Nutritionist Evelyn Tribole shares food recipes that are healthy but don't look it for parents who want to sneak nutrition into their children's diets. Each contains a secret ingredient.
Smoothie
Ingredients:
1/2 cup canned or fresh pineapple chunks (no juice)
1/3 cup carrot juice
1-1/2 cups fat-free frozen vanilla yogurt
1/2 tsp. coconut extract
1/8 tsp. cinnamon
1/8 tsp. nutmeg
1/2 cup ice
Preparation:
Combine ingredients in a blender, blend and serve.
Dark Fudge Brownie
Ingredients:
one 15-oz. can unseasoned black beans
4 oz. unsweetened chocolate
1 Tbs. light butter
6 egg whites
2 cups sugar
3 Tbs. all-purpose flour
2 Tbs. instant espresso coffee powder
1/2 cup chopped walnuts
Preparation:
Mix ingredients and bake at 350 degrees until firm and golden brown.
Feta Cheese Dip
Ingredients:
4 oz. low-fat firm tofu
2 oz. feta cheese
One 8-oz. tub fat-free cream cheese
1 Tbs. snipped parsley
2 cloves garlic, minced
2 tsp. grated onion
2 tsp. dried dillweed
1 tsp. white-wine vinegar
1/4 tsp. coarse black pepper
1/8 tsp. paprika
Preparation:
Combine ingredients, mix and store in refrigerator until served.

One way to sneak healthy foods into everyday recipes is to grate or chop veggies into tiny undetectable bits.
