Fruit Skewers
Cookbook author Diane Morgan tells how to prepare delicious and imaginative desserts on the grill.

Skewered Fruit

This uncooked dessert can be made ahead of time, or you can let guests create their own.

Ingredients:

bamboo skewers
honeydew melon cubes or balls
green grapes
cantaloupe cubes or galls
prosciutto, rolled single slices
limes

Preparation:

The general idea with skewers is to create a pleasing color arrangement. Vary the ingredients up and down the skewer. Squeeze lime over the completed skewer to add a fresh flavor.

This works well as a dessert alone, with ice cream, or as a side dish with jerk chicken and meats. Use ripe, but not overripe bananas. Avoid bananas with brown spots.

Ingredients:

4 to 6 bananas
2 Tbs. unsalted butter, melted
glaze

Preparation:

Leave skin on the banana and slice in half, lengthwise. Use a pastry brush to cover with melted butter. The butter will harden and form a seal to prevent bananas from browning, so they can be prepared ahead of time.

Place bananas on the grill, cut side down. Grill for about two minutes on medium heat. If cooking on an outside grill, cover with grill lid to enhance the smoky flavor. Turn and brush the cut side with the glaze (recipe below). Cook for another two minutes.

Glaze

Ingredients:

1 Tbs. unsalted butter
2 Tbs. molasses

Preparation:

Combine butter and molasses in a pot, then simmer while bananas are cooking. You can also do this in the microwave. Pour over the bananas.

Peaches in a Honey Bath

Ingredients:

large freestone peaches, cut in half, pit removed, skin left on
1 Tbs. unsalted butter
2 Tbs. dark brown sugar
3 Tbs. honey

Preparation:

Brush peach halves with melted butter, then add the butter, honey and brown sugar in a pot. Swirl together and blend well. Brush peaches with honey bath and grill on cut side until warm and grill marks appear.
