Chef Jamie Gwen, the "Goddess of Grub," provides a couple of new ideas for using strawberries.
Strawberry Preserves
Ingredients:
2 qts. fresh strawberries
1/4 cup lemon juice
7 cups sugar
Preparation:
In a large pot, bring all ingredients to a boil, then reduce heat and simmer 30 to 45 minutes until the texture is thick and jam-like. Can preserves according to proper canning procedures.
Strawberry Focaccia
Ingredients:
cornmeal
1 loaf frozen bread dough
2 Tbs. melted butter
1 qt. strawberries
1/4 cup coarse sugar
Preparation:
Allow bread dough to thaw overnight. Break the dough into small portions and flatten out into individual, round pieces. Scatter cornmeal over a baking sheet and place the dough on the sheet. Brush each piece of dough with butter and bake in a 400-degree oven for five to six minutes or just until golden brown.
Remove the bread and sprinkle with coarse sugar. Cut strawberries in half and stack on each dough piece at your discretion. Return to the oven for another five minutes until the strawberries have become warm and soft.
