Spicy Sea Scallops With Adobo Sauce Recipe

Ingredients:

2 whole chipotle peppers (canned chipotle)
2 Tbs. chopped cilantro
juice of one lime
1 Tbs. honey
1/4 cup olive oil
salt and pepper to taste
2 Tbs. adobo sauce*
8 sea scallops

* adobo sauce [ah-DOH-boh]--"Of Mexican origin, this dark-red, rather piquant sauce (or paste) is made from ground chiles, herbs and vinegar, and is used as a marinade as well as a serving sauce. Preparation:

In a bowl, combine chipotle peppers, cilantro, lime, honey, olive oil, salt, pepper and adobo sauce. Add the scallops to the bowl, and coat well. Grill for approximately two minutes per side, or until grill marks appear.
